Broken glass cake – jelly cake recipe from a pastry shop – cake without baking / HB

This cake will decorate any festive table or just delight you with its bright look and refined taste.

Confectioner Lisa Glinskaya showed how to make a light cake without flour and the need to use the oven. It is based on four types of jelly based on orange juice, mango, berry puree and yogurt.

Cake recipe with broken glass

Ingredients

For berry jelly:

  • 200 gr of berry puree (currant + raspberry)
  • 100 ml of water
  • 2.5 rr. l. Sahara
  • 12 g of gelatin (2.5 tablespoons) + 60 ml of water (4 tablespoons. l.)

For exotic jellies:

  • 200 gr pure mango
  • 50 ml of passion fruit juice
  • 50 ml of water (2.5 rr. l.)
  • 2.5 rr. l. Sahara
  • 12 g of gelatin (2.5 tablespoons) + 60 ml of water (4 tablespoons. l.)

For orange jelly:

  • 300 ml of orange juice (1.5 cups)
  • 1.5 st. l. Sahara
  • skin of 1 orange
  • 15 g of gelatin (3 tablespoons) + 75 ml water (5 st. l.)

For yogurt jelly:

  • 500 gr Greek kos (fat content 9%)
  • 300 ml cream (10-35%)
  • 2 tablespoons. l. with a pile of powdered sugar
  • 20 g of gelatin (4 tablespoons with one slide) + 100 ml water (0.5 cups)

For the berry jelly, combine the water with the gelatin, mix, leave for 10-15 minutes so that the gelatin swells.

Put the berry puree and sugar in a saucepan, bring to a boil, simmer for 1-2 minutes and remove from the heat. Add the gelatin mass to the puree and the boiled water, mix it.

Pour the berry mass into the mold and send it in the fridge for 5-6 hours so that the gelatin stabilizes.

Follow the same processes for mango jelly.

Follow the same processes for the orange jelly. However, before mixing the gelatin with the boiled mass, drain the fresh liquid through a sieve.

When all the fruit puree is ready, combine the water with the gelatin jelly gelatin, mix, leave for 10-15 minutes, so that the gelatin swells.

Combine in a bowl Greek yogurt, powdered sugar and cream. Mix everything until a homogeneous consistency.

Collect the cake:

Pour hot water into a large pot and dip the form with the berry jelly in it, remove and return the form to the table, then the jelly will be perfectly removed from the form.

Cut the jelly into random pieces. Do the same with the exotic jelly and orange.

Prepare the form in which you will assemble the cake. At the bottom of the mold we place minced jelly.

Place the swollen gelatin in the microwave for 10-15 seconds to dissolve. Put the gelatin mass in yogurt and mix it.

Toss berries and exotic jelly with yogurt mass. Place the jelly mold in the refrigerator for 5-6 hours to stabilize.

Remove the jelly mold from the refrigerator. Pour hot water into a bowl and dip the mold into it, then return the mold to a plate and carefully remove the mold.

The jelly cake is ready.
