Festive cake with gingerbread in the shape of a Christmas tree – recipe with ginger, ganache / HB

In a program Ranok with Ukraine On the Ukrainian TV channel, cake and blogger Lisa Glinskaya shared an unusual recipe, the cost of which does not exceed 300 hryvnia.

Even though the New Year is already over, you can enjoy a Christmas cake in the shape of a Christmas tree for other holidays or the usual gathering with family and friends. Liza Glinskaya showed how to make a gingerbread cake.

Herringbone cake recipe


For 3 cakes:

  • 100 gr of honey
  • 100 g of sugar
  • 100 g butter
  • 100 g of eggs
  • 5 g baking soda
  • 400 gr flour

For the vanilla ganache:

  • 200 g white chocolate 33-34%
  • 200 ml cream (fat content 30-35%) – 1 part
  • 200 ml cream (fat content 30-35%) – part 2
  • 30 g of honey
  • vanilla or vanilla sugar

For the filling of currants:

  • 100 gr of black currant puree
  • 100 g of strawberry puree
  • 30 g sugar
  • 15 g of corn starch


Pour the sugar into a saucepan and heat until caramelized. In a thin stream, stirring, pour hot butter with honey. Remove the pot from the stove. Add baking soda, stir, leave for 10 minutes. Add the egg, then the flour.

Boil the dough, place in the refrigerator for 12 hours.

To make ganache heat the cream with vanilla and honey, until steamy. Add the chocolate, stir until smooth.

Add the second part of the cream, beat with a dipping blender, until homogeneous. Cover tightly with cling film and refrigerate for 12 hours.

The next day, roll out the dough on parchment, cut a Christmas tree with a metal mold, 5-6 mm thick, pierce it with a fork.

Bake in preheated oven at 180 degrees – 8-10 minutes.

Beat the ganache with the mixer until it hardens. Transfer to a bag with a round nose, 10-12 mm in diameter.

For filling you need to mix all the ingredients in a saucepan, put on the stove, with constant stirring, simmer the mass, simmer for 1 minute, remove from the stove. Cool.

Before use, mix the mixture with a spatula and place in a pastry bag.

Assembling the cake:

Place the cream and the filling of the grains on the cooled cake, place the other cake, continue assembling the cake by changing the layers. Put the cake in the fridge overnight. Garnish with blueberries, rosemary branches, coconut meringue.
