This pancake cake is really very budget but it tastes and looks luxurious. When cut, cheese will flow from it and pancakes instead of pita bread, sweets or pasta give it softness and tenderness.
You can make pancakes:

- Pancakes – 15 pieces
- Champignon Mushrooms – 450 g
- Onions – 250 g
- Cream 15% – 200 ml
- Suluguni cheese – 200 g
- Salt – 1 tablespoon
- Black pepper – 1 tablespoon
- Laurel leaf – 2 pieces.
Cut mushrooms and onions into cubes, fry in vegetable oil with salt, pepper and bay leaves. For flavor, you can add some porcini mushrooms.
When all the mushroom juice has evaporated and they are ready, discard the cream and let it simmer. Add the coriander and simmer until the cream thickens.
Start assembling the cake: place a pancake on parchment paper, minced cheese with low melting on top. Then again stuffing with pancakes and mushrooms. Alternate layers until you run out of pancakes.
Transfer the cake to a baking tray and cover with foil so that it heats well and the cheese melts.
Bake in a preheated oven at 180 ° C for 25-30 minutes, then remove the paper, sprinkle with cheese and place in the oven for 5-10 minutes to melt the cheese.
