This dessert is one of the most popular cafes in the chain and it also has its holiday.

Carrot cake appeared not by chance on the menu of Starbucks cafes. This is a tribute to the historical heritage of the United States. Carrot cake was invented in the 1970s as an alternative to traditional heavy cakes with lots of butter cream.

Carrot Cake is so popular with people that now on February 3, the United States celebrates the national holiday of all sweets and dessert lovers – Carrot Cake Day.

So far, there are no Starbucks cafes in Ukraine, but it is quite possible to repeat the carrot cake at home. Cooking will take about an hour. And the result will be amazing.

Carrot cake like Starbucks

Ingredients:

Biscuits:

  • Flour – 180 gr
  • Peeled carrots – 200 gr
  • Eggs – 2 pieces
  • Cane sugar – 200 gr (can be replaced with regular)
  • Walnuts – 60 gr
  • Raisins – to taste
  • Sunflower oil – 200 ml
  • Vanilla, cinnamon – 1 tablespoon
  • Minced ginger, nutmeg – a pinch
  • Baking powder – 12 gr

Cream:

  • Powdered sugar – 150 gr
  • Cottage cheese – 300 gr
  • Lemon juice – 1 tablespoon. l
  • Vanilla extract – 1 tablespoon

First, grate the carrots on a fine grater – the most difficult stage of cooking, so be careful not to injure your fingers. Grind the nuts with a knife or using a blender. Raisins, preferably light, should be washed in hot water and dried.

Baking cookies: in a deep bowl beat the sugar with the vegetable oil and eggs until it becomes a light and fluffy foam. Add flour and baking powder – mix everything until homogeneous. Now add spices – cinnamon, vanilla, ginger, nutmeg and salt.

Add the carrots, grated walnuts and raisins. Mix again. Divide the dough into two parts. However, if you want more cakes, then divide by three. We send them in the oven one by one in a form coated with oil and sprinkled with flour, or coated with parchment.

The oven should be preheated to 180 degrees, bake the cake for about forty minutes. Check the readiness with a toothpick – if it is dry, the cake is ready. Cool the baked sweets to room temperature. You can bake a large biscuit, and then cut it into the desired number of cakes, but this requires special skills and, preferably, a large sharp knife.

While the cakes are cooling, prepare the cream. Mix cottage cheese, powdered sugar and vanilla extract, you can add a little lemon juice. And we paint the sweets. Coat the top and sides of the cake with the remaining cream. Decorate with crumbs by cutting the cake on top.

The cake is ready. You can eat it immediately, but it is better to leave it for 3-4 hours in the refrigerator for impregnation.
