Rassolnik recipe – how to cook with rice and pickles

Ingredients:chicken (300 g), water (2 l), onion (40 g), carrot (80 g), potato (300 g), rice (100 g), pickle (200 g), peppercorns (2 pieces), brine (40 ml), bay leaves (2 pieces), salt (5 g), chili pepper (5 g).

To prepare a delicious soup, you can get chicken thighs, drum sticks or fillets. Rinse them under running water, if you have chosen a fillet, you should wait long enough. Put the chicken in a saucepan, fill it with filtered water and place it on the stove. Cook over medium heat, periodically removing the foam with a chopping spoon for about 20 minutes.

The rice is washed in running water.

Wash potatoes, onions and carrots, peel. Cut the carrots into small cubes or three on a grater and the potatoes into a medium cube. Leave the onion whole. Cut a small piece of chili pepper into several pieces.

Add the carrots and whole onions to the juice, cook for another 15-20 minutes more. Then remove the onion and chicken pieces from the liquid. If there is, we separate the bones and cut the dough with a knife and turn it into soup.

Pickled cucumbers are extracted from the brine and cut into small cubes.

Add to the gravy the potatoes and washed rice, as well as all the spices: chili peppers (optional), peppercorns, bay leaves. Pour in the brine and pour over the grated pickles. Cook everything together for about 15-20 minutes, try, if necessary – add salt.

Remove from the heat and toss delicious pickles with chicken and rice into bowls. Serve at the table and enjoy the taste.
