This is necessary in order for the larger parts to be connected to each other. It is better to use thigh fillets and chest fillets 50/50 and add a little water for juices. From the spices, in addition to salt, be sure to add a little ground white pepper and crushed dry garlic. This will improve the taste of the chicken. Then mix everything thoroughly and be sure to put it in the fridge. To prepare the dough, which creates a crunchy crust around the chicken fillet itself, you need ice water. Add 30% cornstarch or potatoes to ordinary wheat flour for “crumbling”. I recommend getting just the beaten egg white for a bunch of dough. So the crust of the pieces will come out airy and crunchy.
